This is done to eliminate air pockets to avoid steam build up and pastry/dough cracking during cooking and rising unevenly. Made from food grade plastic it features eight rows of long thin spikes, making pricking of pastry quick and easy. An essential tool for every baker, it is perfect for use in both domestic and commercial kitchens.
